At Brothers Meat Co., we sell high-quality, locally raised beef by the whole, half, or quarter steer at a flat rate. Here’s what you need to know:

Half Steer – $10/lb
Quarter Steer – $10/lb
Each purchase includes:

Steaks, roasts, brisket, and ground beef

Specialty cuts, soup bones, and tallow

Live Weight: ~1,000 lbs
Hanging Weight: ~600 lbs
Final Processed Yield: ~360–400 lbs
Estimated processed meat per purchase size:
Whole Steer: ~360–400 lbs
Half Steer: ~180–200 lbs
Quarter Steer: ~90–100 lbs
Percentage Breakdown of Cuts
Each steer is different, but on average, a whole steer (~380 lbs of processed meat) yields:
Ground Beef: ~40–50% (~150–190 lbs)
Steaks & Roasts: ~30–35% (~110–130 lbs)
Soup Bones & Marrow Bones: ~10–15% (~40–60 lbs)
Tallow (Fat for Rendering): ~8–12% (~30–50 lbs)
Organs (Heart, Liver, etc.): ~3–5% (~10–20 lbs)

For a half steer, simply divide these numbers by 2.

For a quarter steer, divide them by 4.
For example, if a whole steer yields 150–190 lbs of ground beef, then:
Half Steer: ~75–95 lbs of ground beef
Quarter Steer: ~37–48 lbs of ground beef
This applies to all the cuts, so you can easily estimate what you’ll get based on your order size.
How Much Freezer Space Do You Need?
Whole Steer: ~16–18 cu. ft.
Half Steer: ~8–10 cu. ft.
Quarter Steer: ~4–5 cu. ft.
